Ingredients:

Beef stew meat (about 1–1.5 lbs, cut into chunks)

Carrots (2-3, sliced)

Potatoes (3-4, peeled and diced)

Onions (1 large, chopped)

Mushrooms (optional, a handful, sliced)

Beef broth (4 cups)

Garlic (2 cloves, minced)

Thyme and bay leaves (for seasoning)

Salt and pepper (to taste)

Olive oil (for searing)

Instructions:

Brown the beef: In a large pot or Dutch oven, heat some olive oil over medium-high heat. Brown the beef stew meat on all sides, then remove it from the pot and set it aside.

Sauté the vegetables: In the same pot, add the chopped onions, garlic, carrots, and mushrooms. Sauté for a few minutes until the onions are softened.

Add broth and seasonings: Return the beef to the pot and pour in the beef broth. Add thyme, bay leaves, salt, and pepper to taste.

Simmer the soup: Add the diced potatoes, stir everything together, and bring it to a boil. Reduce the heat to low and let it simmer for about 1.5-2 hours, or until the beef is tender and the potatoes are cooked through.
