Cheesy Broccoli and Rice Casserole Recipe

3 cups cooked rice
2 cups fresh broccoli florets (lightly steamed)
1 1/2 cups shredded cheddar cheese (divided)
1 cup cooked chicken (optional, shredded or diced)
1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken)
1/2 cup milk
1/4 cup sour cream
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste

- Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Prepare Mixture: In a large mixing bowl, combine cooked rice, steamed broccoli, 1 cup of cheddar cheese, soup, milk, sour cream, garlic powder, and onion powder. Add salt and pepper to taste. If using chicken, mix it in at this stage.
- Assemble Casserole: Transfer the mixture into the prepared baking dish. Spread evenly and top with the remaining 1/2 cup of shredded cheese.
- Bake: Bake in the preheated oven for 20–25 minutes or until the casserole is hot and bubbly, and the cheese is melted and slightly golden.
