★Ingredients

1 cup granulated sugar

1 cup unsalted butter, softened

1/2 cup brown sugar

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1 1/2 cups all-purpose flour

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup buttermilk (or regular milk with 1/2 tsp lemon juice, let it sit for 5 minutes)

For the Topping:

1/4 cup brown sugar

1/4 cup unsalted butter, melted

1 tsp cinnamon

1 tbsp milk

★Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.

Cream Butter and Sugar: In a mixing bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs one at a time, then add vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.

Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Prepare the Topping: While the cake bakes, mix the melted butter, brown sugar, cinnamon, and milk in a small bowl.

Add Topping: Once the cake is done, remove it from the oven and, while still warm, spread the topping evenly over the cake. Let it soak in as it cools.

Enjoy your cinnamon cake!
