Fluffy Homemade Crepes with Honey

Ingredients:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 ¼ cups milk
  • 2 tablespoons melted butter (plus extra for the pan)
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt
  • Honey or maple syrup for serving

Instructions:

  1. Prepare the batter:
    In a mixing bowl, whisk together the flour, sugar, and salt. Add the eggs and mix well.
  2. Add liquids:
    Gradually pour in the milk while whisking to avoid lumps. Add the melted butter and vanilla extract. Mix until the batter becomes smooth and slightly thin.
  3. Rest the batter:
    Let the batter rest for about 10–15 minutes. This helps the crepes become softer.
  4. Cook the crepes:
    Heat a non-stick pan over medium heat and lightly grease it with butter. Pour a small ladle of batter into the pan and swirl it quickly to spread the batter thinly.
  5. Flip:
    Cook for about 1–2 minutes until the bottom becomes golden. Flip and cook the other side for about 30–60 seconds.
  6. Serve:
    Fold the crepes and drizzle with honey or maple syrup. You can also add fruits, jam, or powdered sugar.
