★Ingredients

250 grams of sugar (optional, for added sweetness)

500 grams of dried carob pods

1 liter of water

★Instructions

Prepare the Carob Pods: Break the carob pods into smaller pieces to help release their natural flavors.

Boil the Carobs: Place the carob pieces in a pot with water. Bring to a boil, then reduce the heat and let it simmer for 1-2 hours, until the water reduces and the liquid thickens.

Strain the Mixture: After simmering, strain the mixture using a fine sieve or cheesecloth to separate the liquid from the carob solids.

Add Sugar (Optional): If you prefer a sweeter syrup, add sugar to the strained liquid. Return to the stove and simmer until it reaches a syrupy consistency.

Cool and Store: Let the syrup cool, then pour it into a clean jar or bottle. Store in the refrigerator and use as needed.

Carob syrup can be used as a natural sweetener for tea, yogurt, or desserts.

Enjoy!
