★Ingredients

2-3 medium-sized beets, peeled and cooked

2 tablespoons of chia seeds

1 cup of coconut or almond milk

1-2 tablespoons of honey or maple syrup (optional)

1/2 teaspoon of vanilla extract (optional)

★Instructions

  1. Cook the Beets: Boil or steam the beets until soft. Let them cool, then chop them into small pieces.
  2. Blend: In a blender, add the cooked beets, coconut or almond milk, honey or maple syrup (if using), and vanilla extract. Blend until smooth.
  3. Combine with Chia Seeds: Pour the beet mixture into a bowl, add the chia seeds, and stir well to combine.
  4. Refrigerate: Cover the bowl and refrigerate for at least 2 hours or overnight. This will allow the chia seeds to absorb the liquid and thicken.
  5. Serve: Once set, give the pudding a good stir, then serve it chilled. You can garnish with fruits or nuts for extra flavor.
