★Ingredients

1 1/2 cups shortening (like Crisco)

2 cups brown sugar

1 cup granulated sugar

2 large eggs

1/2 cup water

2 teaspoons vanilla extract

6 cups quick-cooking oats (uncooked)

2 1/2 cups all-purpose flour

2 teaspoons salt

1 teaspoon baking soda

2 teaspoons cinnamon

1 1/2 cups raisins

★Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat together the shortening, brown sugar, granulated sugar, eggs, water, and vanilla extract until the mixture is creamy.
  3. Add the oats, flour, salt, baking soda, and cinnamon, and mix until combined.
  4. Fold in the raisins.
  5. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  6. Bake for 11 minutes, then rotate the pans (front to back and top to bottom rack in the oven).
  7. Continue baking for another 4 minutes, or until the cookies are golden brown. Check for doneness and bake a little longer if necessary.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Optional Variations: Add chopped nuts, chocolate chips, or shredded coconut for extra flavor.

Yield: Approximately 60 cookies. Enjoy!
