1 1/2 cups shortening (like Crisco)
2 cups brown sugar
1 cup granulated sugar
2 large eggs
1/2 cup water
2 teaspoons vanilla extract
6 cups quick-cooking oats (uncooked)
2 1/2 cups all-purpose flour
2 teaspoons salt
1 teaspoon baking soda
2 teaspoons cinnamon
1 1/2 cups raisins
★Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat together the shortening, brown sugar, granulated sugar, eggs, water, and vanilla extract until the mixture is creamy.
- Add the oats, flour, salt, baking soda, and cinnamon, and mix until combined.
- Fold in the raisins.
- Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
- Bake for 11 minutes, then rotate the pans (front to back and top to bottom rack in the oven).
- Continue baking for another 4 minutes, or until the cookies are golden brown. Check for doneness and bake a little longer if necessary.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Optional Variations: Add chopped nuts, chocolate chips, or shredded coconut for extra flavor.
