Pineapple Upside-Down Cake Squares

★Ingredients

1/2 cup unsalted butter (melted)

1 cup brown sugar

1 can (20 oz) crushed pineapple (drained, with juice reserved)

2 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

2 large eggs

1/2 cup granulated sugar

1/4 cup vegetable oil

1/2 cup milk

1 tsp vanilla extract

★Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking pan.
  2. Pour melted butter evenly into the pan. Sprinkle brown sugar over the butter.
  3. Spread the drained crushed pineapple evenly over the sugar layer.
  4. In a large bowl, whisk together flour, baking powder, and salt.
  5. In another bowl, beat eggs, granulated sugar, oil, milk, vanilla extract, and 1/4 cup reserved pineapple juice.
  6. Gradually combine wet ingredients with the dry ingredients, mixing until smooth.
  7. Pour the batter gently over the pineapple layer.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool slightly before inverting it onto a serving tray. Cut into squares.
