🍍 Pineapple Cheesecake Recipe
🧁 Ingredients
For the crust:
- 2 cups crushed cornstarch biscuits (like Maizena)
- 1/2 cup melted butter
For the filling:
- 400 g (14 oz) cream cheese, softened
- 1 cup sweetened condensed milk
- 1/2 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup chopped pineapple (fresh or canned, drained)
For the topping (optional):
- 1 cup pineapple jam or pineapple chunks cooked with a little sugar
- A few crushed biscuits for decoration
👩🍳 Directions
- Make the crust:
Mix the crushed biscuits and melted butter until combined.
Press the mixture into the bottom of a springform pan.
Bake for 10 minutes at 180°C (350°F) and let cool. - Prepare the filling:
In a bowl, beat the cream cheese and sugar until smooth.
Add the eggs one at a time, mixing well after each.
Then add the condensed milk, vanilla, and chopped pineapple.
Mix gently until all ingredients are well combined. - Bake the cheesecake:
Pour the filling over the crust.
Bake in a preheated oven at 160°C (320°F) for about 50–60 minutes, or until the center is almost set.
Turn off the oven, open the door slightly, and let it cool inside. - Chill:
Refrigerate for at least 4 hours (or overnight) before adding the topping. - Add the topping:
Spread pineapple jam or cooked pineapple chunks over the top.
Sprinkle with some crushed biscuits for decoration.
