🍍 Pineapple Cheesecake Recipe

🧁 Ingredients

For the crust:

  • 2 cups crushed cornstarch biscuits (like Maizena)
  • 1/2 cup melted butter

For the filling:

  • 400 g (14 oz) cream cheese, softened
  • 1 cup sweetened condensed milk
  • 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pineapple (fresh or canned, drained)

For the topping (optional):

  • 1 cup pineapple jam or pineapple chunks cooked with a little sugar
  • A few crushed biscuits for decoration

👩‍🍳 Directions

  1. Make the crust:
    Mix the crushed biscuits and melted butter until combined.
    Press the mixture into the bottom of a springform pan.
    Bake for 10 minutes at 180°C (350°F) and let cool.
  2. Prepare the filling:
    In a bowl, beat the cream cheese and sugar until smooth.
    Add the eggs one at a time, mixing well after each.
    Then add the condensed milk, vanilla, and chopped pineapple.
    Mix gently until all ingredients are well combined.
  3. Bake the cheesecake:
    Pour the filling over the crust.
    Bake in a preheated oven at 160°C (320°F) for about 50–60 minutes, or until the center is almost set.
    Turn off the oven, open the door slightly, and let it cool inside.
  4. Chill:
    Refrigerate for at least 4 hours (or overnight) before adding the topping.
  5. Add the topping:
    Spread pineapple jam or cooked pineapple chunks over the top.
    Sprinkle with some crushed biscuits for decoration.

For extra flavor, you can add a few drops of lemon juice to the filling or use caramelized pineapple slices on top before serving.
